Sustainable diets: an introduction to methods and metrics

Session Overview

Introducing participants to the methods and metrics used in calculating the environmental impacts of foods and diets:
1. An overview of the environmental impacts of foods
2. Examples of how to assign environmental impacts to foods
3. An exercise using country-level data to explore trade-offs between nutrition and environmental impacts of diets
4. A discussion on inclusion of environmental impacts in food based dietary guidelines
5. Possibly a fun game!

Learning Objectives/Outcomes

1. Awareness of the environmental footprints of foods
2. An understanding of common methods in food-environment analysis
3. Experience of estimating environmental footprints of diets and trade-offs with health
4. Understanding of how environmental sustainability is incorporated into food based dietary guidelines
5. An appreciation of diet-related aspects of planetary health

Target Audience

Students and early career scientists (with little or no background in this area).
