Understanding barriers to adopt food safety best practices in the global south
Food safety concerns are often overlooked when addressing food security and access to a nutritious diet. When safety is considered, it is typically linked to poor food handling practices at the market or household level. However, over 800 million urban dwellers in the Global South are estimated to be exposed to vegetables contaminated with fecal pathogens at the farm level. To mitigate this risk, the World Health Organization (WHO) recommends adopting a combination of safe practices from farm to fork. Unfortunately, the uptake of these practices remains very low. Our research focuses on understanding the barriers that hinder the adoption of these practices. It also explores how behaviour change approaches can leverage institutional and psycho-social factors to make safe practices easier to adopt and more attractive to farmers, street food vendors, and consumers.
